Yummy healthy damper.
Ingredients (serves 4)
- 1/2 cup White Quinoa
- 1 cup Boiling water
- 2 1/2 cups Self raising flour
- 1/2 cup LSA meal
- 2 Tbsp Black Chia
- 1tsp Salt
- 60 g Butter
- 1 cup Milk
- 2 Tbsp Pepitas
Method
- Preheat oven to 200 degrees. Place quinoa in a bowl and add boiling water. Set aside for 20 min. Drain well.
- Combine flour, LSA meal, chia and salt in a bowl. Rub butter until combined. Make a well, add milk and quinoa. Mix everything with a knife.
- Divide the dough in 4 pieces. Shape each piece into a round damper. Brush with extra milk. Sprinkle with pepitas. Place on a tray and bake at 200 degrees for 40 min or until golden. Serve warm with butter.
