Great and easy healthy snack for on the go or for kids lunch boxes.


Ingredients (serves 6 | makes 6 )

  • 6 eggs
  • 1 cup grated cheese
  • 24 potato gems
  • 1/2 cup diced ham or bacon

Method

  1. Grease muffin pan. Put four defrosted potato gems in each hole of the muffin pan. Get a cup and squash them down.
  2. Whip eggs and add ham, then pour mixture over potato gems and bake for approximately 15 minutes on 180 degrees fan forced.

  • this idea would also work great with leftover hot chips in place of the potato gems. just cut the chips up to fit!

  • I haven’t heard of potato gems before – the recipe looks simple and somethings the kids would enjoy.


    • You will find them in the frozen section at the supermarket, the same location as frozen chips.
