This is the simplest veggie pasta you can make. It’s quick and easy and if you have boys, they love having “shrek” pasta.

Ingredients (serves 4)

  • 1 serve pasta of your choice
  • 1 clove garlic
  • 1/4 cup baby spinach leaves
  • 1 Tbsp fresh lemon juice
  • 1 Tbsp olive oil
  • 1 medium avocado
  • 1 Tbsp water


  1. Cook pasta according to instructions.
  2. Meanwhile, make the sauce by blending all ingredients in a food processor until smooth. If it is too thick, add a little bit more oil. Season with salt and pepper to taste.
  3. Drain pasta and stir through the sauce until combined.

Notes... You can use a few different toppings for this pasta - top with grated parmesan cheese, or lemon zest.
