This is Miss Fusspots favourite way to eat rice paper rolls.
Ingredients (serves 1)
- Rice paper
- Lettuce or salad leaves
- Carrot - grated
- Cucumber - grated
- Cheese - grated
- Soak a sheet of rice paper in a bowl of water for about 30 seconds. Place on a damp tea towel.
- Add lettuce, carrot, cucumber and cheese along an edge of the paper.
- Fold the food edge over the ingredients until covered. Fold on each side. Roll up.
- Don't forget to add a frozen drink or ice brick to keep cool.
