This is Miss Fusspots favourite way to eat rice paper rolls.

Ingredients (serves 1)

  • Rice paper
  • Lettuce or salad leaves
  • Carrot - grated
  • Cucumber - grated
  • Cheese - grated

  1. Soak a sheet of rice paper in a bowl of water for about 30 seconds. Place on a damp tea towel.
  2. Add lettuce, carrot, cucumber and cheese along an edge of the paper.
  3. Fold the food edge over the ingredients until covered. Fold on each side. Roll up.
  4. Don't forget to add a frozen drink or ice brick to keep cool.

Swap and change the fillings to suit your kids.

  • Yes, a mice alternative ! However I don’t think it really looks good and I doubt if my kids would even touch it.

  • Great alternative to a sandwich or wrap of the kids will eat

  • Very different you can add anything to rice paper rolls this is awesome healthy thanks

  • I have never had these before. They are on my list of things to try but it hasn’t happened yet. Might add to the shopping list and finally give it a go.

  • I love the idea of a fresh rice paper roll with a crunch, healthy greens and a little meat sounds delish.

  • Add a couple of prawns to each roll and you’ve got an adult style lunch, especially with Vietnamese or Thai dipping sauce!

  • These are great and a fun way to get the children to help out with making them and selecting their fillings. My son enjoys making them.

  • Love these. So good with strips of chicken breast too.

  • Great idea, I’m going to make these tomorrow as an after school snack before training and dinner.

  • Yum, never mind the kids school lunch boxes, this one is for ME!

  • Perfect lunch – I love them with sliced prawns in them too

  • Great recipe for lunch
