Believe me these flavours go really well together its superb and the pumpkim comes out with heaps of delicious flavour and they are melt in your mouth.

Ingredients (serves 6)

  • 1/2 kent pumpkin cut into wedges
  • 1/2 cup balsamic vinegar
  • salt ( to taste)
  • 2 large potatoes cut in half
  • 1/2 cup pork lard


  1. Place all the ingredients in a large ceramic tray and coat everything well, cook this at 230 degrees c. Until pumpin gets a little charred at least and hour.

  • oh this is cooked in pork lard – it would taste so yummy – I love the addition of the balsamic vinegar – i guess it would help to cut through the richness of the pork lard – might add this recipe in to my christmas day roast – thanks for sharing
