The cooler months are the perfect time to make this Slow Cooker Sausage Casserole – beautiful rich flavours and perfect for busy nights when you want to arrive home to dinner ready to serve.

Ingredients (serves 8)

  • 6 Small/medium potatoes
  • 1 Medium sweet potato
  • 3 Large carrots
  • 1 Large onion
  • 1 tablespoon Tomato paste
  • 3 Tablespoon Worcestershire sauce
  • 1 Tablespoon parsley
  • 1 Tablespoon rosemary
  • 1 Litre beef stock
  • 12 Sausages


  1. Cut vegetables chunky and add to cooker
  2. Add all sauce ingredients and mix through vegetables
  3. Add raw sausages to slow cooker and place on low for 8 hours
  4. 1/2 hour before finishing time mix 1-2 tbs of corn flour with a little water and add to slow cooker to thicken


You can use any type of sausages for this Slow Cooker Sausage Casserole - beef, lamb, chicken or pork. To add a little more spice, you might even like to chop a little chorizo into the mix too.

  • I have tried to make something like this before with sausages in a slow cooker but the sausages were quite soggy and that’s why I wouldn’t put them in a slow cooker.


  • I love sausage casserole! I often will use chicken sausages instead and my kids scoff it so quickly. A little trick I use is a bit of vinegar in water so that the sausage skins peel off easily which is a preference in our household.

  • This is one of our favourite slow cooker meals. In fact, my son said it’s his favourite! Win! I use a similar recipe, but tend to add carrot, zucchini, capsicum, potato, or whatever might be in the fridge at the time.
