The cooler months are the perfect time to make this Slow Cooker Sausage Casserole – beautiful rich flavours and perfect for busy nights when you want to arrive home to dinner ready to serve.
Ingredients (serves 8)
- 6 Small/medium potatoes
- 1 Medium sweet potato
- 3 Large carrots
- 1 Large onion
- 1 tablespoon Tomato paste
- 3 Tablespoon Worcestershire sauce
- 1 Tablespoon parsley
- 1 Tablespoon rosemary
- 1 Litre beef stock
- 12 Sausages
Method
- Cut vegetables chunky and add to cooker
- Add all sauce ingredients and mix through vegetables
- Add raw sausages to slow cooker and place on low for 8 hours
- 1/2 hour before finishing time mix 1-2 tbs of corn flour with a little water and add to slow cooker to thicken
Notes
You can use any type of sausages for this Slow Cooker Sausage Casserole - beef, lamb, chicken or pork. To add a little more spice, you might even like to chop a little chorizo into the mix too.
