A delicious light salad that accompanies anything from chicken or fish to steak or lamb.

Ingredients (serves 6)

  • 1 large packet baby kale or spinach
  • 1 large packet sliced smoked salmon
  • handful walnuts
  • 4 tablespoons avocado oil
  • 1/2 cup sour cream
  • 1/2 lemon juiced
  • 3 tablespoons balsamic vinegar


  1. Top the kale or spinach with salmon, avocado and walnuts.
  2. Drizzle the dressing over the top or serve in a sauce bowl on the side.
