Ingredients (serves 2)

  • 1 large free range chicken breast (preferably with the skin on)
  • 1tsp of Chinese five spice drizzle of olive oil
  • 2 spring onions, washed, trimmed and finely slicedsmall handful of freshly picked coriander, washed, dried and roughly chopped
  • 1/2 a ripe mango, peeled and cut into chunks juice of one lime
  • small handful of macadamia nuts, roughly chopped handful of pea shoots or watercress
  • 1 little gem or small iceberg lettuce, washed and roughly chopped

  1. Cut the chicken breast into bite sized pieces and pop into a bowl with the five spice, mix so the spice covers all of the chicken.
  2. Heat the olive oil over a high heat in a medium sized pan and once hot add the chicken and cook until browned all over. Once cooked remove the chicken from pan and set aside.
  3. In a large mixing bowl bring together the spring onions, coriander, mango, lime juice, macadamia nuts, pea shoots (or watercress) and finally the cooked chicken.
  4. Toss to combine and serve immediately.

  • not sure the photo matches the recipe! but the recipe sounds divine – would love to see a pic of the recipe if possible

And then can we have the recipe to the gorgeous looking photo please?

  • Such a wonderful and unique recipe idea.

  • I just think mango and chicken is such a winning combo!

  • The recipe actually sounds nice.

  • I don’t like mixing my meat and fruit together. It may taste delicious but it’s not something I’m interested in. Thank you though

  • I don’t love fruit mixed with other food, generally. But sometimes when I try it, I’m WOWed. Maybe in this case ??

  • The food in the photo looks very much like a delicious pavlova?

  • There appears to be other fruits in the photo than what is in the photo and certainly no lettuce show up in the photo. It sounds as though it could be nice provided that you like fruit and meat together.
    Thanks for sharing.

  • I think somethings gone awry with the photo LOL!

  • THe recipe doesn’t really match the photo
