These are a great combination of naughty and nice


Ingredients (serves 4)

  • 150g Fresh baby spinach leaves
  • 100g Australian Feta cheese
  • 1tsp Minced garlic
  • 1tbs Butter
  • 2 Shallots thinly sliced
  • 2 Sheets puff pastry
  • 1 Egg
  • 1 Salt and pepper to season

Method

  1. Melt butter in a frypan and add shallots and garlic, fry briefly before adding spinach.
  2. Remove pan from heat and stir in feta, season and set aside to cool
  3. Cut your pastry sheets into four and place a dollop of mixture in the Center, fold the corners into the middle only slightly overlapping. Baste with egg completely and bake in a moderate over for approximately 10 minutes or until golden brown

Notes

Perfect as an entrée or tasty side, my son is particularly fond of these!

  • Our kids love spinach-feta bites. I make the pastry myself in a gluten free version. When I don’t have enough spinach in my garden I use sometimes frozen spinach as well :)
