This is a wonderful tasty and healthy snack, packed full of goodness, and being easy to prepare means it can be a goto option when you're looking for something different for a lunch time snack!


Ingredients (serves 1)

  • 1 Sweet Potatoe (cooked)
  • 1 cup Spinach
  • 0.5 cup Mushroom
  • 2 cloves garlic
  • 1 tsp apple cider vinegar
  • to taste fresh grated ginger
  • to taste fresh grated tumeric
  • to taste black pepper
  • 0.5 cup cous cous

Method

  1. Chop and stir fry spinach and mushroom with chopped garlic cloves until spinach is reduced.
  2. Add chopped cooked sweet potatoe (either left overs or cook in microwave)
  3. Add apple cider vinegar, grated ginger, tumeric and black pepper
  4. Prepare cous cous with boiling water and when ready stir into the mixture

  • Mmmm, sweet potatoe mushies and spinach! Would make an awesome breakfast, add an egg and toast, great quick lunch too

  • I can see so many anti inflammatory ingredients in this dish, great fir my arthritis. Add to that it just looks like a scrummy meal. Yum
