It’s beer. It’s chicken. And it’s easy.

Here’s how to give him a Father’s Day he won’t forget! Try this roast chicken recipe from Steggles – cooked with beer!

Ingredients

  • 1 Steggles Family Roast Chicken
  • 1 clove garlic, finely minced
  • 1 lime, juiced
  • 1/2 long red chilli, finely minced
  • 1/2 bunch coriander, finely chopped
  • 1 tablespoon honey
  • 2–3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 200ml lager

Method

Firstly, the beer. You can use any brand. Just make sure it’s not his last one. Combine the beer with the other ingredients to make the marinade.

Use half the marinade to baste the chicken and leave in the fridge for at least an hour or preferably overnight.

Preheat oven to around 200°C and roast as normal using the remaining marinade to baste every half hour. Cook until the juices run clear.

Use anything left over as dressing. Serve with roast potatoes, baby peas, sport and more beer.

  • At least all the ingredients in this are gluten free. No gravy means no having to alter the flavour becuase of using gluten free flour which has a different flavour.

  • Think there’d be a major fight in our house if I tried to swipe a beer to use in cooking, but I’ll be brave and try anyway. Would have to leave the coriander out and hope it doesn’t change the finished product too much.
