Ingredients (makes 5 cups)

  • 1 egg white
  • 1/2 tsp vanilla essence
  • 1/4 cup brown sugar
  • 1/2 cup white sugar
  • 2 tbls cinnamon
  • 1 tsp salt
  • 4 cups your favourite nuts

Method

  1. Pre heat oven to 180 degrees. Beat the egg white until it becomes light and frothy
  2. Add in your sugars, cinnamon, salt and vanilla and mix until a nice paste develops.
  3. Scoop in your nuts and mix until well coated and spread onto a oven tray lined with baking paper. Bake 25 minutes and let cool.

  • Oh dear, these sound very more-ish. I don’t know if I’d be game enough to make them, because I think then I’d end up eating most of them myself. Even though they’re sweet, I’d like to try adding a little bit of chilli to them.
