Summer on a plate ! Fresh flavors that compliment each other perfectly

Ingredients (serves 4)

  • 2 Mangos, peeled, de stoned and chopped into cubes
  • 2 Large Oranges , peeled and cut into cubes
  • 2 avocados, diced
  • 2-3 generous handfuls Rocket , washed and torn
  • small handful mint , chopped finely
  • juice of 1 lime
  • 1small red chilli, deseeded and sliced into thin rings
  • 1 long green chilli, deseeded and sliced into thin rings
  • 3 spring onions, sliced finely
  • 1/2 cup mango dressing ( or just pureed mango)


  1. Arrange rocket onto a large flat serving plate , pour over half the mango dressing
  2. Top with mango ,avocado and orange pieces , pour over the remaining mango dressing
  3. sprinkle chillies and spring onions over the top
  4. combine the lime juice and mint together and pour over salad . Gently move pieces around to disperse lime juice


Super tasty salad to have with any light chicken meal . We have also tossed in some cooked prawns and had it as a light lunch or entree
