A quick and easy lunch you can prepare the night before, Ready for for work the next day

Ingredients (serves 2)

  • 1/2 cup Couscous ( made to directions on packet )
  • 3 marinated artichoke heart quarters, cut into smaller pieces
  • 2 Tablespoons Pumpkin seeds
  • 2 tablespoons sunflower seeds
  • Marinated Feta ( or plain is fine )
  • small handful almonds and raw cashews
  • 1 med Beetroot roasted , cubed
  • squeeze lemon juice
  • salt and pepper to taste


  1. Stir all ingredients through cooked couscous
  2. Enjoy !


You can really add anything you like to this salad. I have chopped up left over roast vegies, BBQ chicken, Left over roast lamb Its really yummy and healthy
