The most moist and delicious choc chip muffins with zucchini and carrot for a veggie hit.


Ingredients (makes 14 Muffins)

  • 1/2 cup Olive oil
  • 1/2 cup Brown suger
  • 2 Eggs
  • 1 teaspoon Vanilla essence
  • 2 cups Self raising flour
  • 1/3 cup Cacao
  • 1 cup Milk
  • 1 medium Carrot
  • 1 medium Zucchini
  • 1 cup Choc chips

Method

  1. Preheat oven to 170 and line muffin tray
  2. Whisk suger and oil for 2 minutes
  3. Whisk in eggs and vanilla essence
  4. Whisk in milk
  5. Sift in flour and cacao and then combine
  6. Squeeze out juice of carrot and zucchini and then fold through followed by choc chips
  7. Spoon into muffin tray and bake 20 minutes for full size. 16 minutes for mini or until a knife is pulled out clean.

  • Oh i like the addition of carrot in there too!
