These super quick banana muffins only need three ingredients, and make a delicious morning or afternoon treat.


Ingredients (makes 12 Muffins)

  • 3 cups Self raising flour
  • 375ml Lemonade zero sugar
  • 2 Bananas

Method

  1. Mash banana in a bowl, add flour and combine. Pour in lemonade and stir until mixture forms a sticky batter
  2. Spray muffin tin with oil and spoon mixture between 12 muffin holes.
  3. Bake at 180 for 22 minutes or until golden

  • Reminds me of the easy scone recipe. Super quick and fuss free. Also works with GF flour. I hope this recipe works with GF flour too. I’ll find out later ????

  • I’ll have to give these a try. First time I saw someone using lemonade in baking I thought they were crazy. The scones were crazy good. I always have bananas that need to be used. I’ll keep this recipe in mind for the next lot of bananas.

  • My kids love banana bread and banana muffins, I’ve never made them from scratch so when I seen this 3 ingredient recipe I gave it a try and the kids loved them so simple and easy to make and better still you know what’s in them.
