Ingredients (serves 12)

  • 3 Large banana
  • 3 eggs
  • 2 2/3 cups WHolemeal flour
  • 1.5 tsp Baking soda
  • 1/2 teaspoon Salt
  • 1/4 teaspoon cinnamon
  • 1/2 cup Coconut cream
  • 150mL Coconut oil
  • 1 cup Raw sugar

Method

  1. Lay out 2 bowls.
  2. In the first bowl, whisk flour, Cinnamon, baking soda and salt.
  3. In the second bowl, blend the rest of the ingredients very very well.
  4. Pour wet ingredients onto the dry and combine with a spatula. DO NOT OVERMIX. Just blend gently otherwise result will be tough.
  5. Bake for 1 hour on 175C.

Notes

I make a lot of banana bread cuz I LOVE them. But this is the ultimate one. It is the most most superb moist banana bread ever and all ingredients are very healthy for you! It is so moist that it kinda sticks to your finger, then slides down in the most excellent way! No need butter before serving because it is already perfect by itself!
