This vegan dish is full of olives because I am nuts about them. Feel free to reduce the amount if you feel it is too strong!


Ingredients (serves 2)

  • 15 Kalamata olives
  • 1 large Broccoli
  • 1 cup Cooked brown rice
  • 1/4 teaspoon Miso paste
  • 1.5 cup water

Method

  1. Put all ingredients except miso paste in a medium pot. Simmer for 1 hour.
  2. Add in miso paste, stir and serve!

Notes

I blend this dish sometimes for my bub but without the olives :)

  • I am also nuts about olives, but where do you find vegan miso paste. I have only ever seen it with fish or shrimp paste in it? I drive myself nuts looking for the stuff.
