Just place all of the ingredients in the slow cooker and come back to a delicious, healthy soup!


Ingredients (serves 6)

  • 1/2 Red onion, finely diced
  • 1 Large carrot, diced
  • 2 Sweet potatoes, diced
  • 1 Leek, finely chopped
  • 1 Parsnip, diced
  • 1 Potato, diced
  • 2 Sticks Celery, diced
  • 1 Litre Low Salt Chicken OR Vegetable Stock
  • 1 Clove Garlic, crushed
  • 1 Bay leaf
  • 75g Red lentils
  • 1/2 tsp Dried parsley

Method

  1. Cut the vegetables into equal sizes.
  2. Add all the ingredients to the slow cooker.
  3. Cook on low for 8-10 hours or on high for 5-6 hours.
  4. Purée some of the soup or leave chunky.

Notes

*I have made this soup without onion and garlic for my dad and it still tastes fantastic. *I personally like to serve this with crusty bread.

  • It was cold and raining today so I put this soup on for dinner. It was delicious. I pureed about half of it so it had a lovely thick texture.. My whole family liked it. This recipe is a keeper. Thanks to the OP for sharing it :)

  • This is such a simple way to make soup. Just add all of the ingredients, set the timer and come back home to a beautiful smelling house and a wonderful tasty soup for tea. Better yet, only one dish to clean up
