A very quick and tasty lunch


Ingredients (serves 1)

  • 1 wholemeal muffin
  • 2 teaspoons sauce (I use spicy red)
  • 1/4 onion, finely chopped
  • 2 cherry tomatoes
  • italian herbs or basil
  • feta cheese
  • salt and pepper

Method

  1. Cut the muffin in half.
  2. Spread with sauce.
  3. Add toppings. I use one cherry tomato per side.
  4. Grill until golden.

Notes

Of course you can add any toppings you like. We used to make these when I was a kid with just some ham, pineapple and cheese.

  • Muffins taste the best either savoury or sweet. I mix and match on the weekends to add a variety of taste especially mini pizzas.
