Ingredients (serves 6 | makes 1 Large Salad)

  • SALAD:
  • 1 packet 1 packet Vegie Delights Vegie Sausages
  • 4 medium Zucchini, ribboned or spiralised (400g)
  • 2 Carrots, peeled and ribboned or spiralised (370g)
  • 2 tbsps Finely chopped Spanish Onion
  • 1 400g tin Chickpeas, rinsed and drained
  • 250g Cherry Tomatoes, cut into halves
  • 1/2 cup Walnuts, roughly chopped
  • 1/2 cup Fresh parsley leaves, finely chopped
  • 1/2 cup Fresh mint leaves, finely chopped
  • 1/4 cup Fresh dill leaves, finely chopped
  • DRESSING:
  • ¼ cup (62mL) Fresh orange juice
  • 1 tsp (5mL) Maple Syrup
  • 1½ tbsps (30mL) Lemon Juice
  • 2 tbsps Extra Virgin Olive Oil

Method

  1. Heat BBQ Grill on medium heat, cook Vegie Delights Vegie Sausages according to packet instructions, turning frequently.
  2. Remove from BBQ and slice into pieces.
  3. Whisk together ingredients for dressing in a small bowl.
  4. In a large bowl toss together zucchini, carrot, Spanish onion, chickpeas, tomatoes, walnuts, herbs and sausages, drizzle with dressing, toss again and serve.

  • I was given a free sample of these Sausages to try through Flybuys.
    So gross! I opened the packaging and the smell instantly made me nauseated. No way was I going to eat them, let alone even cook them.
    I’m all for people eating what they want for whatecer reason – but I don’t know how anyone could actually eat these?
