Such an easy salad and although there is only one colour it is still so delicious and full of great nutrients.
Ingredients (serves 3)
- 350g Lettuce leaves of your choice.
- 2 Spring onions thinly sliced.
- 1 Avocado peeled and diced
- 1 1/2 tablespoons of lemon juice
- 2 teaspoons of extra virgin olive oil
- 1 teaspoon of Dijon mustard
- Salt to season
- Combine the lemon juice, oil, mustard and a pinch of salt in a large bowl, whisk ingredients together
- Add lettuce, spring onions and avocado and toss well to combine.
