Ingredients (serves 2)

  • 50grams Flour
  • 50 grams butter
  • 250ml Strong Beer (room temp)
  • 250 grams Cheddar
  • 2 teaspoons hot mustard
  • 2 tablespoons Worcestershire Sauce
  • black pepper
  • Bread for toasting


  1. Melt the butter and make a roux with the flour. Stir in the beer bit by bit
  2. Add cheese and stir until melted.
  3. Mix in the mustard sauce and pepper
  4. Lightly toast the bread, and spread the mix thickly. Place under a grill for a minute or two until bubbling


Dad made this once and accidently put in far too much mustard - it burnt for hours!
