Substitute Biscotti for pears for a nice crunch


Ingredients (serves 4)

  • 4 Egg Yolks
  • 1/4 Cup Castor Sugar
  • 1/3 Cup Marsala
  • Sliced Pear

Method

  1. Place egg yolks, sugar and Marsala in a heatproof bowl over a saucepan of simmering water. Be sure bowl does not touch water.
  2. Beat with electric hand mixer for 10 minutes or until thick and pale.
  3. Pour into cups and serve with pear slices.

    My mum used to make it.

    We didn’t eat it with fruit but it is fabulous over ice cream.
