Super quick accompaniment to any meal or even great on an antipasto platter, also great for kids lunchboxes. Can eat hot or cold.
Ingredients (serves 4)
- 1 cup Plain flour
- 1 Medium zucchini grated
- 1/4 tsp Salt
- Add enough water to flour so that it becomes a thick but runny paste.
- Add salt and grated zucchini and mix through.
- Heat frypan, drizzle in oil and spoon in mixture. Cook until golden on each side. Let rest on paper towel to absorb any excess oil.
