A quick and healthy breakfast, that’s full of goodness!


Ingredients (serves 1)

  • 1 cup Zucchini - grated
  • 1 Egg - whisked
  • 20 grams Feta
  • 1/4 Avocado
  • 2 tsp Oil

Method

  1. Combined the grated zucchini and the whisked eggs.
  2. Heat oil in a pan over a medium heat. Add the zucchini mixture and gently fry for a few minutes until golden, flip and cook to your liking.
  3. Serve fritter on a plate topped with feta and avocado.

  • Oh yummy, I make these but I put a little more in the fritter mix.
    but I haven’t tried fetta and avo on top, that sounds very yumm.
