This zucchini slice is a delicious alternative to sandwiches.


Ingredients (serves 6)

  • 2 Zucchinis, grated
  • 1 cup Self raising flour
  • 1/2 cup Oil
  • 1 cup cheese, grated
  • 1 large Onion
  • 3 Rashes Bacon
  • 5 Eggs
  • Salt and pepper to taste

Method

  1. Preheat oven to 170 degrees. Dice onion and bacon and fry in a pan.
  2. Put onion and bacon in a bowl and add all of the other ingredients.
  3. Pour mixture into greased pan and bake at 170 degrees for 35 minutes.
  4. Serve on its own or with salad.

Notes

Perfect for school lunches, dinner, parties or finger food for toddlers.

  • I love this recipe but I couldn’t use this many eggs as my son has health issues. Thanks for sharing though


    • You might be able to make it with an egg replacer.

  • Mine have never looked like this. I add different grated veggies that are lonely, in others not enough to make a meal out of. Great for the lunch box if any left from tea.
