This zucchini slice is a delicious alternative to sandwiches.


Ingredients (serves 6)

  • 2 Zucchinis, grated
  • 1 cup Self raising flour
  • 1/2 cup Oil
  • 1 cup cheese, grated
  • 1 large Onion
  • 3 Rashes Bacon
  • 5 Eggs
  • Salt and pepper to taste

Method

  1. Preheat oven to 170 degrees. Dice onion and bacon and fry in a pan.
  2. Put onion and bacon in a bowl and add all of the other ingredients.
  3. Pour mixture into greased pan and bake at 170 degrees for 35 minutes.
  4. Serve on its own or with salad.

Notes... Perfect for school lunches, dinner, parties or finger food for toddlers.

  • You can cut down the oil to 1/4 cup and add any extra veg that you might need to use up. Work well with a grated carrot and some frozen sweet corn or peas
