A delicious veggie packed slice that can be served hot or cold.

  • 400g Carrot, sweet potato or pumpkin, grated
  • 1 1/2 Cups Corn kernels or frozen peas
  • 1/2 Onion, diced

  • 3/4 Cup Wholemeal self-raising flour
  • 1 Cup Cheddar cheese, grated

Method

  1. Preheat oven to 200•C.
  2. Whisk eggs in a medium jug and set aside.
  3. In a large bowl combine remaining ingredients. Add eggs and stir mixture until well combined.
  4. Spray a large baking dish with oil. Pour in zucchini mix and flatten with a spoon.
  5. Bake for 40-45 minutes or until firm and golden brown.
  6. Rest in the pan for 10 minutes before cutting into slices.

Notes... *Substitute other vegetable including baby spinach, cherry tomatoes, broccoli florets, mushrooms, grated parsnips or potato. *Add fresh parsley, basil or dill. *For a main meal you could cut larger slices and serve with a side salad
  • Love that we can hide so many veggies in here and can’t go wrong with cheese!

  • I make this for my daughter all the time and just switch up the vegies. Also add a bit of bacon or ham works well and it freezes perfectly.

  • I used to make a zucchini slice but it was cooked in the microwave. My kids loved it growing up but unfortunately I can’t find it and they want it to cook for their kids. Love this recipe but no good if it’s not microwaveable.
