Need a lunch box filler? These banana chai muffins are super easy to make in a blender and so tasty.


  • 3 bananas
  • 4 eggs
  • 5 dates
  • 1/2 cup almond butter
  • 1/4 cup oilve oil
  • 2 tsp vanilla extract
  • 1/2 cup coconut flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 ground ginger
  • 1 tsp ground cardamon
  • 1 1/2 tsp cinnamon
  • pinch black pepper


  1. Place bananas, eggs, dates, almond butter, olive oil and vanilla in a blender and blend well.
  2. Add coconut flour, baking soda and powder, and spices and blend again.
  3. Pour mixture into a muffin tin and bake for 20 minutes at 180 degrees.
  4. Eat!

  • Beautiful ingredients ! The type of recipe we like and use. For a nut-free version you could use (homemade) sunflower butter instead of almond butter.

    • With almond butter as one of the ingredients it might not be eise to put this in the lunchboxes to school.
