Ingredients (makes 400 grams pesto)

  • 340gm Sundried tomato in oil
  • 15 capers
  • 125gm Pine nuts
  • 100gm Vintage cheese (shredded)
  • 4 cloves garlic
  • 1 tablespoon Italian herbs mix

Method

  1. Put all ingredients in a food processor and blend on low speed.
  2. Oh wait, that's it!

Notes

Vintage cheese goes really well in this recipe but feel free to use parmesan instead if you prefer a less cheesy taste...
