Avocado or prawn are nice too for this baby sushi.
Ingredients (makes 20 Baby sushi)
- 1 cup Sushi rice
- 1 1/2 cup Water
- 3 tbs Rice wine venegar
- 1 tbs Sugar
- 3 sheets Nori
- 2 Cucumber
- 100 gr Smoked salmon
- Place rice and water in a saucepan, cover and bring to boil. Reduce heat to simmer for 10 minutes. Turn off heat and leave for 10 minutes covered.
- Spread rice into a container and allow to cool, then sprinkle with combined vinegar and sugar. Stir thoroughly.
- Pour rice into sushi mould and press down. Line nori sheet with 1 cm width then put the rice from the mould and salmon on the top. And other half with cucumber on the top.
- Place on a serving platter, cover with plastic wrap and refrigerate for 20 minutes to allow the nori to soften. Serve with soy sauce.
