Ingredients (serves 4)

  • 600 gr Chicken breast
  • 1/2 Capsicum
  • 10 pcs Small onion
  • 5 pcs Garlic
  • 3 cm Galangal
  • 3 pcs Chili (remove seeds), roughly chopped
  • 4 Curry leaves
  • 2 tsp Honey
  • Pinch of salt

Method

  1. Put all ingredients into a food processor and blend till fine. (Do not add water)
  2. Marinate chicken with chili paste. Keep in the fridge overnight.
  3. Wrap the chicken with foil. Bake in preheated 200C oven for 30-35 mins.
