This broad bean dish is great for vegetarians!


Ingredients (serves 8)

  • 2 cups Small broad beans
  • Water
  • 2 Tomatoes
  • 1 Tbsp Cumin
  • To drizzle Olive oil
  • 1 Tbsp Salt
  • 1 Tbsp Lemon
  • 1 Onion

Method

  1. Soak beans overnight. Add enough water to cover then some more.
  2. Drain and rinse beans. Add enough water to cover then some more. Simmer for 6 hours, adding water when required.
  3. Drain remaining water. Dice tomatoes and onion and add, continue simmering for 5 minutes.
  4. Add remainder of ingredients, stir and serve.

Notes

I love eating this with flat bread such as Lebanese breàd.

  • While I don’t like the texture of broad beans, my Mum LOVES them and will sit down to a plate of steamed broad beans! I will pass this on to her as I’m sure she’ll love it thanks.
