This salad comes together pretty quickly, you can prepare it in advance and just add your Paul Newman’s Own Creamy Caesar Dressing and chickpeas once you arrive at your destination. You don’t have to peel the skin off your chickpeas but it gives you a gorgeous crunch with some added protein which is a nice change from the usual croutons.

Ingredients

  • Paul Newmans Own Creamy Caesar Dressing
  • 2 broccoli heads (about 900 grams before you remove the stems)
  • 150g dried cranberries
  • 300g bacon (maple bacon goes a treat here)
  • 1/2 red onion, very finely sliced
  • 1 cup freshly shaved parmesan
  • salt and pepper to taste
  • fresh squeeze of lemon and a pinch of lemon zest (optional)
  • spiced maple chickpeas
  • 1 tin (400g) chickpeas, rinsed and dried well
  • 1 tbsp maple syrup
  • 1/2 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp salt

Method

  1. Give your broccoli a good rinse, then chop it into little trees. You dont have to blanch your broccoli, but I like to - it makes it bright green, tender, and less bitter! Just pop it in boiling water for about 45 seconds, then straight into an ice bath to keep it crisp.
  2. Rinse and dry your chickpeas. For extra crunch, you can dry them in the fridge for a couple of hours if you have time. Peeling the skins is totally optional, but I like to do it for texture.
  3. Toss the chickpeas with maple syrup, olive oil, paprika, and a pinch of salt. Give them a good mix, then air fry at 180 celsius for 8 to 10 minutes, shaking halfway through to keep them from burning.
  4. While the chickpeas are cooking, fry up your bacon however you like it! I go for crispy and then chop it into chunky pieces.
  5. Once the bacon and chickpeas are done, set them aside.
  6. In a large mixing bowl, combine the broccoli, bacon, red onion, freshly shaved parmesan, and cranberries. If you're serving right away, add the chickpeas and a generous drizzle of Paul Newmans Own Creamy Caesar Salad Dressing. For extra flavour, add a squeeze of lemon and some salt and pepper. Toss everything together and pile it high on a serving plate. Enjoy!

  • Oh wow… this sounds wonderful with the cranberries.
    I have not heard of spiced maple chickpeas before but they sound amazing especially mixed with the maple bacon.
    I am making a ceaser salad for dinner tonight but now whish I had the ingredients to give this one a try. yummo

  • Wow this looks soo amazing and yummy. The ingredients are soo so easy always available at my place. We all love anything made with broccoli. Even my kids loves broccoli. So will definitly will not forget to make this recipe. Great for diet and fibre rich foods. Looks so fulfilling. Will try and share.

  • What? Where have I been? I’ve never seen broccoli in a salad!! What a fun idea! I’ve literally only had it with gravy or occasionally cheese sauce. I’m definitely going to give this a try! We actually had Cesar salad last night but with lettuce, can’t wait to give this recipe a go!

  • I love broccoli and Caesar salad! This seems like a match made in Heaven. I’m excited to make this, im hoping the kids will enjoy it as well as they are big fans of broccoli, i might add some chicken to make it a bit more filling as a main meal.

  • Yum, I love broccoli. However as vegetarian I would never add bacon to a salad and I’m afraid we are not dressing lovers either. I would prefer to top a salad with cheese and always think that broccoli and blue cheese makes a lovely and tongue tickling combination. I would probably leave the dried cranberries out too

  • This recipe sounds delicious especially as it includes ingredients I love all in one recipe. It’s definitely going to be on my menu this week. I can just imagine it with a nice piece of crispy salmon drizzled with a maple syrup dressing and served on a bed of baby spinach.

  • Broccoli in a salad is a big yes from me! One of my favourites salad bars/stores often sells with broccoli and kale mix that is jsut so delicious. Makes me feel guilt free enjoying it, knowing im getting my intake of veggies in for the day with little to no effort

  • Oh yum! Broccoli is one of my favourite vegetables and I’ve never thought to use it to make or add to a Caesar salad. The creaminess of the dressing mixed with the broccoli would taste amazing! I’m definitely going to be giving this one a try sometime soon! Yum! Thank you.

  • Broccoli is such a great vegetable as it is good for health. I like cranberries and they are also a good ingredient to promote good health. I really like that it is an easy recipe to make. That gives me more confidence in trying it out. Thank you for sharing this with everyone.

  • I’m willing to give this recipe a go. I don’t have any experience with using chickpeas but they look like they could be good. I love Caeser Salad and this version sounds like it would be good. Love the photo. It looks colourful and healthy. Thank you it looks great.

  • What a delicious dish, such a smart and wonderful idea to use broccoli. The addition of spices chickpeas would be great, a contrast with the creamy dressing.

  • This sounds lovely. I like to blanch broccolli for salad too, this makes it o much tastier. Personally I’m not a fan of dressings and would leave ” Paul Newmans Own Creamy Caesar Dressing” out. As a vegetarian I would skip the bacon too, but you could replace it with a vegetarian bacon.

  • Would never have thought of putting yummy broccoli in a salad. What a novel idea! As a vegetarian I’ll be trying this without the bacon as the chickpeas will be delicious toasted. I also totally agree with the awesomeness of the Paul Newman’s brand and the ethical stance taken by the beloved actor.

  • I made this the other day as i happened to have all the ingredients in the house. I was quite surprised at how delicious it was as i wasn’t sure if broccoli would go in a Caesar salad but it was surprisingly yummy and a great alternative to the traditional caesar salad.
