This salad comes together pretty quickly, you can prepare it in advance and just add your Paul Newman’s Own Creamy Caesar Dressing and chickpeas once you arrive at your destination. You don’t have to peel the skin off your chickpeas but it gives you a gorgeous crunch with some added protein which is a nice change from the usual croutons.

Ingredients

  • Paul Newmans Own Creamy Caesar Dressing
  • 2 broccoli heads (about 900 grams before you remove the stems)
  • 150g dried cranberries
  • 300g bacon (maple bacon goes a treat here)
  • 1/2 red onion, very finely sliced
  • 1 cup freshly shaved parmesan
  • salt and pepper to taste
  • fresh squeeze of lemon and a pinch of lemon zest (optional)
  • spiced maple chickpeas
  • 1 tin (400g) chickpeas, rinsed and dried well
  • 1 tbsp maple syrup
  • 1/2 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp salt

Method

  1. Give your broccoli a good rinse, then chop it into little trees. You dont have to blanch your broccoli, but I like to - it makes it bright green, tender, and less bitter! Just pop it in boiling water for about 45 seconds, then straight into an ice bath to keep it crisp.
  2. Rinse and dry your chickpeas. For extra crunch, you can dry them in the fridge for a couple of hours if you have time. Peeling the skins is totally optional, but I like to do it for texture.
  3. Toss the chickpeas with maple syrup, olive oil, paprika, and a pinch of salt. Give them a good mix, then air fry at 180 celsius for 8 to 10 minutes, shaking halfway through to keep them from burning.
  4. While the chickpeas are cooking, fry up your bacon however you like it! I go for crispy and then chop it into chunky pieces.
  5. Once the bacon and chickpeas are done, set them aside.
  6. In a large mixing bowl, combine the broccoli, bacon, red onion, freshly shaved parmesan, and cranberries. If you're serving right away, add the chickpeas and a generous drizzle of Paul Newmans Own Creamy Caesar Salad Dressing. For extra flavour, add a squeeze of lemon and some salt and pepper. Toss everything together and pile it high on a serving plate. Enjoy!

  • I made this the other day as i happened to have all the ingredients in the house. I was quite surprised at how delicious it was as i wasn’t sure if broccoli would go in a Caesar salad but it was surprisingly yummy and a great alternative to the traditional caesar salad.

  • Oooh what a delicious twist on caesar salad. I’ve never really used chickpeas much but I’m definitely keen to give this a try. The maple bacon and the cranberries sound amazing too and I’m always looking for ways to incorporate broccoli into out meals during summer as it one of my favourite vegetables.

  • This salad looks so amazing and perfect for summer. Chickpeas are one of my favourite additions at the moment to my salads and would go so nicely with these ingredients. I might even add some black beans for a bit of extra flavour as well as these are also a great addition to a summer salad.

  • Now this definitely looks like a recipe I need to try for my family. Using he good greens of broccoli is clever when you accompany it with a delightful creamy sauce. We all know everyone loves a creamy sauce!! Great way to encourage those fussy eaters to eat their greens.

  • I will definitely be making this salad. Home grown Broccoli tastes so good anyway and the addition of the maple bacon [should I be able to find it here in Oz] along with the other ingredients sounds wonderful. I like the idea of the crunch from the chick peas and I would add pomegranate seeds to it as well. Thanks for sharing.

  • What a tasty and highly nutritious salad recipe! I am not overly a fan of cranberries so I wonder if I could sub these for some pomegranate seeds? They should offer the same sweetness and colour? The maple chickpeas sound yummy too even on their own I think they would be a nice snack

  • I really do love to make and to eat a variety of different salads during the warmer months of the year. I also love to eat creamy salads and they are so good paired with bbq meat or cold roast chicken. I like all of the ingredients in this recipe.

  • What a great spin on a Caesar salad. Lettuce can be a little hit and miss right now, probably due to this unpredictable weather, so this recipe is perfect


    • An interesting point about lettuce; I really do love broccoli and take every opportunity to add it to other recipes. Broccoli is also a vegetable that everybody in the family loves to eat. I really like the tip about the maple bacon too; it is truly so delicious in salad recipes.
