An old-fashioned omelette that my Dad used to make. Whip it up on your frying pan or electric wok for an easy meal that takes minutes to make.


Ingredients (makes 1 omelette)

  • 2 Eggs
  • 1/2 onion
  • 1/2 cup grated cheese
  • 1/2 cup ham cut into strips
  • salt and pepper
  • chopped parsley
  • butter/oil for frying

Method

  1. Beat the eggs in a bowl.
  2. Add the onion, cheese and ham and stir just to combine.
  3. Heat oil/butter in frypan and add the mix. Let it fill the frypan. Add salt and pepper over the top of the mix and the parsley so you get an even spread.
  4. When the mixture seems set use an egg flipper or spatula to fold in half. Serve.

Notes

This is quite a heavy omelette so will keep you full - great for brunch. We also used to have this as dinner with some salad on warmer days.
