Ingredients (makes 20 )

  • 10 Cherry tomatoes
  • 1/2 Mango diced finely
  • 1/2 Capsicum diced finely
  • 2 small stems Coriander
  • Lemon juice to taste


  1. Cut the tomatoes in halves and scoop out the flesh to use as mini bowls. Do not discard the flesh.
  2. In a bowl, put the tomato flesh, mangoes and capsicum. Mix well. Add lemon juice and coriander to taste.
  3. Scoop about 2 teaspoons of the mixture into the cherry tomato cups. Serve :)
