  • 1 Medium sized boiled potato
  • 1/2 Chopped small onion
  • 2-3 Mint and coriander leaves
  • 1/2 tsp Salt and red chilli powder
  • 1 Lemon/lime

  1. Cut boiled potatoes in small cubes.
  2. Combine boiled chickpeas and potatoes.
  3. Add mint, coriander, onion, salt and pepper. Squeeze a lemon/lime and mix well. Enjoy...

You can add salt and chilli according to your taste. You can add cucumber, corn, carrots, capsicum and other vegetables you like. You can use tinned chickpeas or prepare your own.

  • Where’s the Mayo and sour cream? Bacon too. Also not too sure on the chickpeas

  • This looks very yummy! I’m definitely going to try this out. Thanks for posting!!

  • I love potato salad but my husband hates mayonnaise so this looks like a great option to try

  • An interesting salad to make and so healthy! Thanks!

  • Potato and chickpeas are so yummy and coriander seals this as a recipe to try for sure. I adore coriander!

  • Good building blocks! I’ll leave the coriander out because I’m one of those people who thinks it tastes like soap haha
