Ingredients (serves 12)

  • 2 large eggplant (cut into 2 cm cubes)
  • 1/4 cup Coconut oil


  1. In a big bowl, combine the eggplant and coconut oil evenly using your hands.
  2. Spread them on a large baking tray and bake for 20 minutes on 180C or until golden brown.
  3. Serve as sides.
