Ingredients (serves 4)

  • 500 gm packet fettucini pasta
  • 1 tbls butter
  • 2 cloves crushed garlic
  • 1 1/4 cups cream
  • 1 egg yolk
  • 1 tsp grated lemon zest
  • 1/3 cup parmesan cheese
  • cracked pepper

Method

  1. Cook pasta according to directions, drain, reserving about 1/2 cup of water.
  2. Meanwhile, melt the butter in a pan over medium heat. Add the garlic and a pinch of salt and cook, stirring occasionally, until lightly golden, about 3 minutes. Whisk the cream, egg yolk and lemon zest in a bowl. Reduce the heat to low and add the cream mixture and cheese to the skillet. Cook, whisking, until slightly thickened, about 2 minutes. Season with salt and 2 to 3 teaspoons pepper.
  3. Add the pasta to the pan and toss, adding enough of the reserved cooking water to loosen the sauce. Sprinkle with extra parmesan if desired for serving.

  • There is a lot of carbohydrates and dairy in this recipe, It needs coriander, parsley or something similar in it, or perhaps another vegetable finely grated and stirred in before serving.

  • I’ve never tried this but it seems interesting. I’d be willing to try it. Feels like it’s missing something – meat of some sort – but it could be great as a salad option too.
