Ingredients (serves 4)

  • 4 large potato's
  • 1/4 cup diced ham
  • hand full Diced onion, and shallots.
  • pinch salt n pepper.
  • 4 boiled eggs.
  • 1/2 cup whole egg mayo.
  • 1 tsp whole grain mustard.
  • pinch dried dill.
  • pinch cracked pepper

Method

  1. Dice potatoes. Boil till tender. Drain and put in fridge to cool. Boil eggs till semi hard then put in cold water to cool down.
  2. diced up all salad bits put in a large bowl add potato. Peel and dice eggs add to bowl.
  3. DRESSING........ mix all bits together. Add to salad. Mix through and chill for at least 30 minutes before serving.

Tastes even better the next day. :-)
