Easy and tasty egg salad.
- 6 eggs
- 1/2 onion (finely chopped)
- 1/2 cup mayonnaise
- 1 teaspoon chicken stock
- 1 teaspoon curry
- Hard boil the eggs, cool and peel.
- In a bowl, mix the mayonnaise, curry powder and chicken stock to make a dressing.
- Cut the eggs and gently mix in the dressing along with the onions.
- Add the parsley and any seasoning (salt and pepper) to taste.
