If you find yourself (or the kids!) running out the door every morning with a rumbling belly, whip up a batch of these Healthy Breakfast Cookies for an easy and healthy grab-and-go breakfast.

From the creative kitchen of Arman Liew (better known as The Big Man’s World) comes these utterly delectable breakfast treats that are super easy to make, and adapt into 10 different flavours!

Ingredients (makes 12 Cookies )

  • 2 cups rolled oats
  • 1/4 cup protein powder (optional)
  • 1 and 1/4 cup mashed banana
  • 1/2 cup peanut butter
  • 2 tablespoons maple syrup

Method

  1. Preheat the oven to 180C. Line a large baking sheet with baking paper.
  2. Add oats, protein powder, banana, peanut butter, and maple syrup into a bowl and mix until a thick dough remains. Fold through your favourite mix-ins (see notes below).
  3. Scoop out portions of the dough and place them on the lined sheet. Use a knife to shape the dough into large, cookie shapes.
  4. Bake for 10-12 minutes, or until the edges are golden brown.
  5. Remove the cookies from the oven and let them cool completely.

Want to mix it up? Here are the different variations to up your breakfast cookie game: 1. Cinnamon roll: Add 1/2 teaspoon cinnamon and 1 tablespoon of brown sugar. Drizzle the baked cookies with a simple glaze made of cream cheese, milk, powdered sugar and vanilla extract. 2. Oatmeal raisin: Fold through 1/2 cup of raisins. 3. Biscoff: Swap out half the peanut butter (or nut/seed butter of choice) with smooth Biscoff or cookie butter spread. 4. Caramilk: Drizzle the cookies with melted Caramilk chocolate and/or Caramilk baking chips. 5. White chocolate and raspberry: Add 1/2 cup of fresh or frozen raspberries and 1/4 cup of white chocolate chips. 6. Strawberry: Fold through 1/2 cup of strawberries. 7. Double chocolate:  Add 1/2 cup of cocoa powder and fold through 1/4 cup of chocolate chips. 8. Chocolate peanut butter: Add 1/2 cup of cocoa powder and drizzle melted peanut butter over the freshly baked cookies. 9. Nutella: Replace the nut/seed butter with homemade Nutella. 10. Monster: Fold through 1/2 cup of m&m’s or candy buttons.
