This is an essential lunchbox filler in our house! You can use what ever fruit you have handy grapes, pineapple and pears work well too!

Ingredients (serves 6)

  • 1 Dragon fruit
  • 1 Kiwi fruit
  • 1 Tub of blueberries
  • 1 Packet of jelly crystals tropical flavours

Method

  1. Simply slice your fruit into bite size portions and divide between containers
  2. Make jelly according to instructions on packet
  3. Divide jelly mixture between cups, seal with lids and refrigerate!

Notes

You can make this healthier by using gelatin and stevia with fruit juice substituted for the cold water.

  • I never thought of doing this. I always thought the fruit had to be partly cooked. I’m definitely going to make some of these

  • I made them with strawberry and blueberries.

Kiwi and pineapple are not good for it as jelly cant set properly.
