Pork mince can substitute with chicken mince or beef mince.
Ingredients (makes 14 pieces)
- 2 long Eggplants
- 200 gr Pork mince
- 1 tbs Rice wine
- 1 tbs Soy sauce
- 1/4 tbs White pepper
- 1/3 tbs Salt
- Prepare two egg white and about 200 gr rice flour for coating and vegetable oil for frying.
- Cut eggplants slanted about 3 cm into few pieces, then cut the middle of eggplant almost but not all the way through.
- Mix well in a bowl minced pork, rice wine, soy sauce, pepper and salt then stuffed into each of the eggplant.
- Dip eggplant in the egg white, then coat with rice flour, deep fry until golden brown. Ready to serve.
