Pork mince can substitute with chicken mince or beef mince.

Ingredients (makes 14 pieces)

  • 2 long Eggplants
  • 200 gr Pork mince
  • 1 tbs Rice wine
  • 1 tbs Soy sauce
  • 1/4 tbs White pepper
  • 1/3 tbs Salt


  1. Prepare two egg white and about 200 gr rice flour for coating and vegetable oil for frying.
  2. Cut eggplants slanted about 3 cm into few pieces, then cut the middle of eggplant almost but not all the way through.
  3. Mix well in a bowl minced pork, rice wine, soy sauce, pepper and salt then stuffed into each of the eggplant.
  4. Dip eggplant in the egg white, then coat with rice flour, deep fry until golden brown. Ready to serve.

  • YUm, would try this with chicken as my house isn’t big fans of pork. How long would you deep fry each for? I find that eggplants soak up so much oil.. (Tasty as heck though).. Can they be shallow friend or baked before hand and quickly fried afterwards. Can’t wait to try. thanks for sharing
