Meal prepping is one of the simplest ways to ensure you get enough of the nutrients your body needs throughout the day. The Golden spiced Thai style chicken salad from Mayver’s is the perfect inspiration and is super easy to prepare ahead at home or can be assembled at work!

Ingredients (serves 4 | makes 4 salads)

  • Poached chicken
  • 1 cup cauliflower rice (store bought works)
  • 200g roasted baby tomatoes
  • 400g roasted pumpkin
  • Handful of mixed greens
  • 1 lemon
  • 1 cut avocado
  • 1 tsp sunflower seeds
  • 1 tsp sesame seeds and pepitas
  • 2 tbsp Mayver's Dark Roasted Crunchy Peanut Butter
  • 1 tbsp Coyo natural yoghurt
  • 1 tsp bone marrow
  • 1/2 tsp golden glow mix (turmeric, cinnamon, ginger and black pepper)
  • 1 tbsp garlic and onion
  • pinch of ginger
  • drizzle of manuka honey
  • squeeze of lime
  • pinch of chilli flakes
  • salt and pepper

Method

  1. Assemble salad with poached chicken, cooked cauliflower rice, roasted baby tomatoes, roasted pumpkin, mixed greens, squeeze of lemon, cut avocado and a sprinkle of sunflower seeds, sesame seeds and pepitas.
  2. Finish with a gut healing, Golden spiced Thai inspired dressing. Mix Mayver’s Dark Roasted Crunchy Peanut Butter, the natural yoghurt, bone marrow, golden glow mix, garlic and onion, ginger, honey, lime, chilli flakes and salt and pepper together and mix through salad.

  • OMG!! This looks absolutely amazing and something I’d love to devour. There’s a whole load of ingredients there. The bone marrow?? Where do I find that?

  • I have never heard of using ‘bone marrow’ in a recipe. I’m off to research it :)

  • No thanks it looked good in the picture but some of the ingredients made me feel sick, so I would make it up my way minus most of that recipe.
