Slightly on the green side steak sandwich

Ingredients

  • 2 slices bread
  • 1/2 tsp butter
  • 1/4 avocado
  • 12 baby spinach leaves
  • 1 slice cheddar cheese
  • 1 tsp olive oil
  • 100g poterhouse steak
  • 1 tsp paprika
  • salt & pepper

Method

  1. Spread one slice of bread with butter and the other with avocado. arrange spinach on top of buttered slice.
  2. Heat frypan on high heat, add oil, sprinkle steak with paprika and season. Sear on one side for a minute, turn steak over and reduce heat to medium. continue cooking until cooking preference reached.
  3. Add mushrooms to the pan for remaining 2 mins of cooking.
  4. Allow steak to rest a few minutes, then place on top of spinach, top with mushroom, then cheese, then avocado slice.

Notes

Season avocado if preferred. Add more salad ingredients or change them up - onion is a great extra. Use whichever bread you prefer, have it toasted if you wish. The options are endless.

  • We have steak sandwiches for dinner all the time and it never occurred to me to add avocado.

  • I’d love to make this with some onion in it, and on some Baker’s Delight Capeseed bread, which is one of my favourites. I think it would also work with some cooked chicken breast too.
