These healthy pancakes can be whipped up and made within minutes, and are yummy warm or cold


Ingredients (makes 6 baby size pancakes)

  • 1 banana Mashed
  • 1 Egg Beaten
  • drizzle Vanilla essence
  • cinnamon to taste
  • small amount of spray cooking oil

Method

  1. Mix all ingredients together to form a batter
  2. Place tablespoons of mix into a hot pan that has been lightly sprayed with oil, and cook for a few minutes per side until golden brown and cooked through

Notes

These are a great snack for toddlers as they think they are getting a treat, but they are actually healthy for them! Can be enjoyed warm or cold and freeze well too. Store in the fridge for up to 2 days.

  • A great healthy snack or meal. I would add oats or chia for some extra protein.


    • Oats absorb a lot of moisture so you would need to add liquid of some type or they would be very dry.
