A quick meatball recipe that’s our family favourite. The hidden veg is great, add more grated veg, or cook in a crushed tomato sauce
Use any mince, chicken, lamb or beef


Ingredients (serves 4)

  • 500g Mince
  • 1 Carrot, grated
  • Fresh herbs, chopped fine
  • 2 Eggs
  • 1 cup Baby spinach, chopped fine
  • 4 Garlic cloves, crushed

Method

  1. Mix all ingredients in a bowl thoroughly
  2. Roll into small balls
  3. Fry slowly until golden
  4. Serve with dipping sauce

  • My tweens would love to cook these themselves I think.

    • chia seed eggs work. Soak up 3TBS Water with 1 TBS Chia seeds.

  • So many kids love meat balls. Easy to make and a great way to add vegetables in her diet. I love the idea of adding spinach!
