Lovely creamy consistency.


Ingredients (makes 2.5 cups)

  • 2 egg
  • 2 tablespoon lemon juice
  • 4 teaspoons dijon mustard
  • 2 cups vegetable oil
  • an amount sea salt and ground white pepper

Method

  1. Mix the eggs, lemon juice, mustard, salt and pepper in a blender until well combined.
  2. With the motor running pour the oil in slowly and process until the mixture is thick and creamy.
