Delicious no bake slice that’s quick and easy to make, perfect for the school lunchbox!


Ingredients (serves 12 | makes 12 Oat bars)

  • 1 1/2 tbsp Coconut oil
  • 1/2 cup Peanut butter
  • 1 tsp Vanilla
  • 2 tbsp Honey
  • 1 tsp Cinnamon
  • 1/2 cup Rolled oats
  • 1/3 cup Flaxseed meal
  • 1 tbsp Chia seeds
  • 1/2 cup Chopped almonds
  • 1/3 cup Coconut
  • 100 grams Cooking chocolate
  • 1 tbsp Coconut oil
  • 2 tbsp Chopped almonds

Method

  1. Melt peanut butter, coconut oil, honey, vanilla and cinnamon in a pot over a low heat. Heat until combined.
  2. Add oats, flaxseed meal, chia seeds, almonds and coconut. Stir until combined.
  3. Line baking tray with baking paper and pour mixture in. Level out pushing down with the back of a spoon.
  4. Melt chocolate and coconut oil in a pot. Drizzle over the top and sprinkle chopped almonds on top.
  5. Put into the fridge for 2 hours. Cut into bars. Serve and enjoy!

  • This looks so good I love nuts but dont like Oats at all maybe I can replace the oats with something else

  • With peanut butter and almonds this cannot go to school. Might get way with it at high school though. Looks interesting though.

  • Yum this one’s going on my menu!!! Would sub the p/b for either another seed butter or the no nut version of p/b as, strangely, my kids don’t eat it.
